This is an idea that would work for a salad course or as an appetizer. These salad sticks are loosely based on a caprese salad, but would work great with fruit or grilled vegetables.
This is a pretty simple recipe. For these, you need one tomato, one mozzarella ball and one basil leaf for each stick. I used bamboo skewers cut to length to thread the food. The ones pictured have safari stickers decorating the tops of the sticks because we had a safari themed party for my son’s first birthday. The sticks would be cute topped with dot stickers, stars or simply left plain. More festive sticks than bamboo skewers could also be used. Ooh – like little drink umbrellas.
Caprese Salad Sticks
30 cherry tomatoes
30 fresh mozzarella balls
30 basil leaves
Balsamic Vinegar (optional)
Starting with the basil, thread one of each on to a skewer and arrange the completed sticks in a bowl. Leave plain, drizzle with balsamic vinegar or provide some on the side for dipping.
