My mother-in-law lived in Italy for a number of years and she still serves a European style after dinner salad. I actually love the custom. It is a great way to refresh the palate between dinner and dessert and I’ve heard that it aids in digestion. The key to this type of salad is keeping it simple, often just dressed greens. I like to add tomatoes and/or avocados. In the fall, she adds thinly sliced apples which is a nice surprise in a salad. It is totally customizable and of course it can be served with the meal if that is your preference.
After Dinner Salad
1 bundle romaine hearts, sliced (or any other lettuce)
1 avocado, sliced
1 tomato, sliced or about 10 cherry tomatoes
Oil Free Vinaigrette to taste
- Put clean, dry lettuce in serving bowl.
- Toss with salad dressing until lettuce is coated.
- Arrange tomatoes and avocados on top. (If you dress it with the avocados alreay added, the avocados will break up.)
